Escolar, also known as Walu or Butterfish is a sweet, white fish that melts in your mouth like butter.
King Salmon, Troll Caught
The King Salmon weighs over 30lbs and has irregular black spots on the back and both lobes of the dorsal fin. It is dusky rose or dull green along it's sides.
Chilean Sea Bass
Chilean Sea Bass, is a slow-growing inhabitant of deep, cold waters in the Southern Hemisphere, particularly Antarctica. The fish has a high fat content and mild, white flesh that forms large flakes when cooked.
Alaskan Black Sea Bass
Black sea bass are fairly stout fish. The background color of the black sea bass is smokey gray, brown, or bluish black with darker patches and light speckles. The belly is only slightly lighter than the sides.
Cabrilla, White Bass
The "white seabass" or Cabrilla is the largest member of the croaker family (and is sometimes called "king croaker".) Prized for its large size and good flavor.
California Halibut
The body of the California halibut is oblong and compressed. The head is small and the mouth large. Although a member of the left-eyed flounder family, about 40 percent of California halibut have their eyes on the right side. The color is dark brown to black on the eyed side and white on the blind side.
Golden Eye Rockfish
Rockfish are many times referred to as snapper in fish markets or restaurants. The Golden Eye Rockfish is a deep bodied fish that has a firm texture and a sweet full flavor.
Ling Cod
The body of the lingcod is elongate, tapering and only slightly compressed. The head is elongate and conical, the mouth is large with numerous large teeth. Ling cod are generally dark brown with lots of spots and blotches on the upper part of the body, but come in a variety of colors ranging from blue green to red brown.
Red Rock Fish
The white meat of the rockfish is firm in texture and low in fat, with a mild, sweet flavor. Meat of the deep-bodied variety tends to have a slightly firmer texture and fuller flavor.
Sablefish, (Black Cod)
Sablefish is black or greenish gray on dorsal surface, light gray on sides. Sometimes called "black cod" but is not a cod.
Coho Salmon
Alaska Silver (Coho) salmon are Greenish blue back with silvery sides with small black spots on the back, dorsal fin, and usually on the upper lobe of the tail. The gum line is white to light gray. Spawning of both sexes have dark backs and heads with sides colored maroon to reddish.
Sockeye Salmon
Best known of the Pacific salmon, sockeye are the most sought after for their superior flesh, color and quality. They have a rich oil content and their red color make them a favorite.
Copper River Salmon
Copper River salmon are bright silvery salmon with a bright red flesh, a firm texture, and a rich nutty flavor that makes them a very delicious dining experience.
King Salmon, White or Red
The King Salmon or Chinook are the most highly prized salmon. They have richly-flavored red meat with soft-textured, medium flakes. There are also white-meat versions of this species.
