Black Sea Bass, Jumbo
The Black Seabass feeds primarily on shrimp, crabs and other mollusks, which produces an intricately flavored sweet white meat. The basic color is dark brown or black; dorsal fin has rows and stripes of white on black. Jumbo Sea Bass usually are about 1.9 to 2.5 Lbs.
Mahi-Mahi, Head Off
Mahi-Mahi is a Bright and colorful, this fish ranges in weight from 3 to 45 lbs. The firm-textured, dark meat of mahi-mahi turns white and opaque when cooked.
Cod Steak
Cod are easily distinguished from most other marine fish by their three rounded dorsal fins and two anal fins that are mirror images of the second and third dorsals. They also have a prominent barbell "whisker") on the chin.
Jumbo Fluke
The fluke has both eyes on one side of its head and rests on the ocean floor on its side. The fluke is called a left-handed flatfish because its eyes are on the upper surface of the head when the fish is facing left. The species has a very large mouth that extends below and beyond it eyes. Fluke can grow to a length of more than 30 inches and weigh in excess of 20 pounds, although 1 to 3 pound fish are more typical with an 8 pounder being considered large. Sold as 4-UP.
Hake (Sow)
Hake is a member of the cod family and is an important food fish. Their lender pelvic fins and fewer teeth distinguish them from silver hake. The many common names for this species include squirrel hake, white hake, mud hake, ling, merluche and codling. A slender fish, averaging 1 to 8 lbs..
Halibut, East Coast
Halibut belong to a family of flounders. Most halibut are torpedo-shaped and symmetrical, often with heavily pigmented backs and light, white bellies, and both eyes are on the right side. The left or blind side is white with occasional blotching and faces the ocean bottom. Sold as 10-40.
Monkfish Tails, Dayboat
Monkfish are marine bottom-dwelling fish. These fish have very broad, depressed heads, and enormous mouths. They have long, sharp teeth and a modified spine called an "esca", that is quite mobile and can be angled forward so it can dangle in front of the fish's mouth and be wiggled like bait to lure its prey. Sold as 4+ tails.
Pollack
Pollack distinguishes itself from its cousin, the cod, by its large, prominent lower jaw. It also has a dark, wavy lateral line, while the cod has a pale, straight one. Pollack is found at depths of up to 200 meters.
Skatewings
Skates are among the most ancient fish living today in the ocean. The bottom-dwelling, kite-shaped skate is found worldwide in temperate and cold waters as well as in deep, tropical waters. Skates prefer to eat mollusks, crustaceans, and small fish that give their flesh a sweet mild shellfish-like taste, similar to scallops.
Wild Striped Bass
The striped bass is the largest member of the temperate bass family. They are silvery with greenish backs, white bellies, and seven to eight solid horizontal stripes on each side of their body. Wild striped bass grow rapidly; at one year they can be 10-12 inches. They can live up to 30 years, and grow to be 6 feet long.
Swordfish, Center Cut
The Swordfish has a big sword-like beak. The beak extended from the mouth, is used for slashing its prey. The beak is one third of the body length of a swordfish. An adult swordfish has no teeth, so it has to use its beak to make food smaller. It eats mollusks and other fish.
Red Grouper
Grouper has a brownish red color, the lining of mouth scarlet-orange with blotches on sides in unorganized pattern. The second spine of dorsal fin longer than others, and the pectoral fins longer than pelvic fins. the tail is squared off, and there is a margin of soft dorsal black with white at midfin with black dots around the eyes. The red grouper is commonly 1 to 2 feet long and weighs up to 15 pounds.
American Red Snapper
The body and fins are pinkish red in color, lightening to a white underside. At a size less than 14 inches (35cm) northern red snapper have a dark spot on the upper sides below the anterior soft dorsal rays. They have a large head with small red eyes and a somewhat pointed snout. Snapper is sold as 1-1.25 lbs, 2-4 lbs, 4-8 lbs and 8 lbs and up.
Spanish Mackrel, Large
The color of the back is green, shading to silver on sides. Golden yellow irregular spots above and below the lateral line. The front of dorsal fin black, and the lateral line curves gently to base of tail. Sold from 2-4 lbs.
Yellowfin Tuna
The yellowfin can have much yellow in their fins and shiny, golden yellow along their sides. After one year of life, yellowfin are 8-10 pounds. Age-2 yellowfin are about 35 lbs. and age-3 about 75 pounds. A four year old yellowfin averages about 130 lbs. Yellowfin are well known for their physical beauty and powerful swimming. Yellowfin Tuna is sold as #1, #2, and #2+.
Barracuda
Barracuda are pike-like fishes, elongated and slender with long jaws and protruding, razor-sharp teeth. The body is colored silver overall, with dark green to gray along the back. Blotches on the lower sides are variable in number, size, and position. The species reaches a length of 6 feet and a weight slightly greater than 100 pounds. They feed and travel in schools very close to the coast.
Bluefin Tuna
The bluefin tuna is one of the largest of the tunas. The body is a metallic deep blue above and the lower sides and belly are silvery white. In fresh specimens, alternating colorless lines and rows of dots can be seen along the lower sides. The first dorsal fin is yellow or blue, the second is red or brown. The anal fin and finlets are yellow, edged with black. The central caudal keel is black.
Cobia
Cobia is a long, slim fish with broad depressed head. The lower jaw projects past upper jaw, and it has a dark lateral stripe that extends through eye to tail.
Corvina
The Corvina's Back is tan with flanks and belly silvery. Tail is often yellow. The body long and narrow relative to body length. Mouth large reaching nearly to a vertical line from the back of the eye; lower jaw undershot. Center rays of tail longer making posterior edge of the tail >-shaped.
Florida Cusk
This is a long, eel-like fish, tan in color with two or three faint stripes along the sides. The Cusk is relative of the cod family and is prepared much like cod.
Escolar
This species is dark brown becoming almost black as it ages. The Escolar has a body that tapers towards both ends. It grows to over 2m in length.
King Fish
The Kingfish is a large, powerful and hard-fighting fish. It is silver in color on the underbelly, and on the top, however it has a distinctive blue green coloring along the top of it's upper side. A yellow line separates the upper and lower colors, this runs from the head to tail. The tail is distinctly yellow.
Marlin Loins
Marlin have a deep, moderately compressed body, and are deep blue to rich brown above, silvery below, 15 bars formed by pale blue spots on each sides. It's head is steep, and it's snout is elongate, and forms spear.
Red Fish
Red Fish have moderately short compressed bodies, a spiny head, large eyes and rough scales. The upper parts of their head and body are red and the lower surface silvery. The scales have red spots forming thin lines along their body, and their eyes are red. The tail is red and other fins are pinkish. The color of the fillet is white to pale pink. The texture of the fillet is fine, with large flakes. Tender to firm. The fat content is medium to high, and the flavor is delicate to mild to slightly sweet.
Ribbon Fish
The Ribbon Fish sides are uniform silvery, skin smooth, and the dorsal fin extremely long.
Scorpion Fish
In most cases scorpion fish are small to medium in size with a perch like appearance. The head is large with a wide mouth opening, and one of the main characteristics of the scorpion fish which is the bony element under the eyes. They are highly edible with a tender and tastey meat.
Seatrout, (Weakfish)
Seatrout have a dark olive or blue-green back. It's sides are covered in tones of blue, purple, lavender, gold and copper with irregular diagonal rows of vaguely-defined dark spots appear above the lateral line
Snook, 10+
The Snook is a silvery fish with a yellow-green or olive tint, the common snook has a body that is streamlined and slender with a distinct black lateral line running from the top of its gills to the end of its forked tail. It has a sloping forehead, a long, concave snout, and a large mouth with brush-like teeth and a protruding lower jaw.
Stone Bass, (Wreck Fish)
The Wreck Fish has a combination of a sea-bass-like body with a very rough head having a prominent ridge and strong spines on each gill cover, and a bony protuberance over the eye and on the nape, give the wreck fish an aspect so different from that of any other Gulf of Maine fish. It's coloration ranges from brown through to grey on the back and upper sides, and becoming lighter towards the yellow hues of the belly.
Tilefish
The tilefish is sometimes referred to by names such as golden bass or golden snapper. It is olive green or dark tan above, changing to yellow or rose on the lower sides. The back and upper sides are dotted with brilliant yellow spots, and the belly is white. Tilefish have firm, pinkish white flesh that provides a lobster- or crab-like taste.
Triggerfish
The body of the gray trigger is light gray to brown. The dorsal and anal fins are marked with spots and lines.
Triple Tail
Triple Tail is a deep, somewhat rounded shape fish that gives it the appearance of an oversize panfish. It's color varies but is usually brownish and mottled. This fish has the unusual placement of the second dorsal and anal fins, which are located posteriorly on the body, close to the tail making it look like it has three tail lobes.
Wahoo
The Wahoo's upper body is dark blue or electric blue with waved stripes. The lower body is silver.
Walleye Pike
The body shape is elongate, streamlined, and slightly compressed. The color of this fish is variable. It is generally brownish yellow to grayish yellow on the back and sides, shading to white on the belly.
Whitebait, (Spearing)
Whitebait is a name for juvenile fish of various species and families (particularly the herring family). They are usually under 2 inches in length and have white, translucent, or silvery skin. They have a rich, strong flavor, soft texture, and high fat content.
Wolffish
Most of the Wolffish are long, gray-blue or greenish, weighing about ten pounds. Wolffish have long, sharp front teeth and a set of back teeth built for crushing prey like clams, crabs, and sea urchins.
Green Eels, Raw
