Langoustines 2/4

Langoustines are a small crustacean that packs a big taste. A member of the lobster family,
it yields a tasty morsel of tail meat that offers an affordable alternative to higher-priced shellfish like lobster and shrimp. |
Shrimp, head on, Maya  |
These shrimp are farmed in southern California and frozen and packaged with the head on.
Sold in package sizes of U/08, U/10, 10/20 and 20/30 per kilo.

Shrimp, White
|
The body of the shrimp is segmented and encased in a shell. The head spine, walking legs and antennae are attached to the head section, while the edible portion (the "tail") bears the swimming legs and tail fan. Shrimp range in color but are usually brown, grey, or blue-tinged when raw, and pink and white when cooked. Shrimp meat is firm and delicately flavored.
The shrimp are sold as: 10/20, 16/20, 21/25, and 26/30 also Iqf.

Shrimp, Tiger  |
Most black tiger shrimp available in this country are raw, shell-on tails.
The shrimp are frozen in blocks shortly after harvest. Black tiger shrimp grow especially quickly, because they are grown in warm,
tropical waters, so they molt quite often. When cooked they turn pink like other shrimp. Tiger Shrimp are sold in packages of 16/20 and 21/25.

Shrimp, White
|
White Shrimp are crustaceans. They have ten legs like crabs and lobsters, and a shell covering the head and body. White Shrimp are available throughout the year but the peak months for the fisheries are November to January.
Shrimp are sold by size or count, based on the number of headless shrimp per pound.
White Shrimp are commercially harvested in specially prepared ponds. Sold as: U-7, U-10, and U-15.

Langoustines are closely related to the crayfish but are salt water decapods. Even though the word langoustine is French, it is used in English as well because true langoustines do not exist in North America.

Maine Shrimp  |
Northern shrimp or Maine shrimp are pinkish to red in color and possess a large set of black eyes. They are clawless
crustaceans average three to five inches in length and weigh less than one half an ounce.

Spot Prawns
|
Spot Prawns are one of the largest of the shrimp family, they can reach lengths of 7-9 inches. The prawn's body color is usually reddish brown or tan with white horizontal bars on the shell and distinctive white spots on the abdominal segments.
The spot prawn is known for its sweet, delicate flavour and firm texture.
