Cat Fish Fillet
Catfish are distinguished by the presence of barbels, or "whiskers"; the lack of true scales; strong spines at the front of the dorsal and pectoral fins; and, in most cases, an adipose fin on top of the body, in front of the caudal fin. Farm-raised Catfish has a mild, slightly nutty taste that complements a wide variety of flavors and cuisines.
Arctic Char 4-5
The arctic char is a member of the Salmonidae family. It also bears resemblance to the salmon, but it has a longer and more colorful body. Arctic char's flavor appeals to people who enjoy trout, and it is considered by many as infinitely superior to salmon, flakier than salmon, and a milder, sweeter flavor, rich in omega 3 fatty acids.
Striped Bass
Striped bass may variously appear to be light green, olive, steel blue, brown or black. They earn their name from the seven or eight continuous stripes that mark their silvery sides, extending from the gills to the tail. Their undersides are usually white or silver, with a brassy iridescence. Farmed Striped Bass is a cross between a white bass & striped bass this fish has a milder, less distinctive taste than the original. It's moderately firm, low in fat & is available as 1-3 pound whole fish.
Idaho Boneless Trout
Rainbow Trout are olive to bluish on the back, silvery sides, with a pink band on the sides from head to tail. They have many small black spots on the back, sides, adipose and dorsal fin. Distinct radiating rows of black spots on tail fin. They are normally 8-32 inches in length and weight 6 ounces to over 21 pounds. Depending on the fishes diet, the meat can be white to orange-red in color. The meat is firm, flaky and is considered excellent eating. Like most trout species, the meat is better fresh than frozen.
Boneless Red Meat Trout
Trout are steel-blue, blue-green, yellow-green to almost brown on back; silvery sides; silvery white below. They weigh 2 to 8 pounds and are 20 to 30 inches long. Depending on the fishes diet, the meat can be white to orange-red in color.
Tilapia Fillet
Tilapia is similar in shape to sunfish and variously colored (pale red, white, gray, or gray-blue)and can range in size from 1 to 5 lbs. Tilapia has white or pinkish flesh that's firm, low in fat, sweet and mild in flavor. The tender skin is edible.
Atlantic Salmon
Atlantic salmon make a tremendous journey during their lifetime, migrating from the fresh water streams of their youth to feeding grounds in the north Atlantic Ocean and back again to spawn. Salmon are among the most beautiful of fish; stream-lined, silver and graceful. Perhaps most important of all, Atlantic salmon are a symbol of clean, unspoiled waters that run wild to the sea. Sold as: 11-13, 15+, 6-9, and 9-11.
Branzino, 1-1.25
Not a sea bass at all, it's actually just a renamed Patagonian toothfish, a slow-breeding deep-water fish. Its body is long and oval. Its mouth is very wide. Its back is grey or green. The sides and the belly are white-silver. A sleek, mild-tasting flaky fish.
Dorade Royal 1.0-1.25
Dorade Royal has silver sides, a red spot on each cheek, and a yellow to gold swollen bump between the eyes, almost on the forehead. They range from 6-9 lbs., and have a firm tasty flesh.
