Australian Sea Bass
Barramundi, (Sea Bass), are a very important commerciallly. The color of fillet is white with large, firm flakes, and a distinct mild flavor.
Blue Warehou
The Blue Warehou has an irridescent blue colored back. Long pectoral fin with a white belly, olive brown head, and tail, and fins. It is black in color between gill collar and pectoral fin.
Gurnard
Sometimes referred to as "Sea Robin",and "Feeler Fish" because of the long scent feelers under the chin. These fish are distinguished by their large pectoral fins the back portion of which has become a great, wing like structure.
Hapuku
Hapuka could be described as a large mouthed, rather heavy-bodied stocky solid fish. It is often dully coloured in dark greens or browns, though can have lighter colors and spots over it's entire body.
John Dory
The colors of a John Dory is an olive green color, however they can be a yellowish brown to grey on the back with an almost metallic sheen, blending into the silver grey sides with a black spot on the side.
Orange RoughyFillet
Orange Roughy have a bright reddish orange head and body and their mouth and gill cavities are black. Orange Roughy's meat is white and delicate with a shellfish-like flavor making it highly popular around the world.
Red Emperor
Red Emperors are glowing salmon pink to red, its pink fins tipped in bright crimson or red, and three distinctive darker red bands sweeping up its face, pectoral fin to back and down again. The color of raw fillet are white with a fine firm texture, and it's taste is swet to mild.
Trevally
This fish is a silverish greenish colour with metallic look and the dark spot above the gill plate. It's fins are yellowish. Blue green above with a yellow sheen, silvery white below.
Yellow Tail
The Yellowtail, sometimes called Kingfish, is gray to blue above with silver sides and a yellow stripe running the length of its body. Its tail and fins are yellow. An average one would be 20-30 pounds.
